Naringinase is a multienzyme complex composed of α-L-rhamnosidase and β-D-glucosidase, which sequentially hydrolyzes naringin into naringenin, rhamnose and glucose. It is widely applied in the citrus processing industry to reduce juice bitterness, improve flavor quality and enhance the bioavailability of flavonoid compounds.
