Description Snailase is a multi-enzyme complex derived from snail digestive extracts. It contains cellulase, pectinase, amylase, protease, and more than 20 other enzymes. It is commonly used for yeast cell wall degradation, protoplast preparation, juice clarification, citrus peel removal, and jam production. Under optimal conditions (30–40 mg enzyme per g cells at 37 °C for 1 hour), yeast cell wall digestion efficiency exceeds 90%.
